Dinner last night was Pulled Pork with lettuce cups, stir fried veggies and homemade paleo mayonnaise.
This was my first attempt and it was delicious, you make a spice mix and rub into a 1kg shoulder of pork (bone in), then wrap up in cling film (glad wrap) and leave over night in the fridge. The next day remove the wrap and place in the slow cooker and cook on low in the slow cooker for 10 hours. When I removed from the cooker I used two forks to pull the pork apart.
I served it in lettuce cups with stir fried veggies and homemade paleo mayonnaise.
My husband loved this and said he could eat it every night.
