Since I changed my way of eating, I have introduced Meat Free Mondays, and I love it. My husband, Michael loves his meat so it means I need to be creative to make these meals. Tonight I’m doing a coconut vegetable curry with quinoa. I will post the recipe later once I take some photos.
For lunch today I had a grilled vegetable stack with smoked paprika and a sprinkle of Parmesan cheese . It was delicious and it’s one of my favourite lunches when at home and it’s always filling. It is also carb free, gluten free and real food.
