Chicken and bacon with pesto zucchini noodles


This is is carb free, gluten free and real food.

Ingredients: 3 x zucchini cut into noodles. 2 chicken breasts diced, 6 sundried tomatoes, 5 slices of streaky bacon, 250ml cream, 1 tbsp of homemade pesto (basil, pine nuts &olive oil) and handful of grated Parmesan cheese.

1. Chop up the bacon and fry until golden brown and set aside.  Then fry the diced chicken in the bacon fat until cooked.

2. Add the bacon back to the pan with the sundried tomatoes and cream. reduce the sauce on a low heat.

3. While the sauce is reducing, coat the zucchini noodles in the pesto and fry in a different pan on a high heat in butter for a few minutes.

4. Serve up and sprinkle Parmesan over the dish.
